Carrot Cake
Preparation time: 30 min.
Baking time: 45 - 50 min.
Serves: 6 - 8

Ingredients
Milkmaid Sweetened Condensed Milk : 1 tin (400g)
Carrot : 250g, (2 cups), grated
Maida : 200g
Butter : 100g
Baking powder : 1 tsp.
Soda bicarbonate : 1 tsp.
Aerated Soda : 125ml
Nutmeg powder : 1 tsp.


Method
1. Preheat oven to 180° C.
2. Grease and dust the baking tin with maida.
3. Sieve together maida, baking powder and soda bicarbonate. 4. Dust carrots with some of the maida to prevent them from
    settling at the bottom.
5. Melt butter, cool and add Milkmaid Condensed Milk. Beat well. 6. Add 2 tb sp. of maida to Milkmaid Condensed mixture. Stir,
    add 2 tb sp. of aerated soda and beat well. Repeat
    alternatively maida and aerated soda till all the maida and
    soda are used up.
7. Mix in carrots and nutmeg powder.
8. Pour batter into the prepared baking dish and bake at 180° C
    for 45-50 min. in a pre heated oven.
9. Remove the cake from the tin. Allow to cool on a wire rack
    for 5-10 min. Slice and serve.
